Paleo Hummus


Ok so, yes this is terrible food photography. I was in a rush (not that I'm very good anyway). Moving past that, I really wanted to share this one. I made it over the weekend since I bring hummus almost every day with my lunch. It seems like a good way to nom some extra veggies and I really liked it with my roast chicken and cauliflower. The garlic and tahini add just enough zip to make it interesting. Plus it took about 3 minutes to make, and barely needed any oil. Its a keeper!


Recipe:
2 peeled zucchini
tbsp minced garlic
1/4 cup tahini
juice of 1 lemon
olive oil and salt to taste
a sprinkle of paprika or cayenne peeper

Chop zucchini with garlic, tahini, and lemon in a food processor. Add in oil until the hummus comes together. Salt to taste. Top with a sprinkle of paprika or cayenne if you like.


Im thinking about trying out a pesto-like hummus next weekend by adding in nuts and herbs. Might be good right?
